Black is abesnce of colour and white is all the colours of light mixed together.

Sophie is right – different shades (of grey for example) are simply when the light gets brighter or not, and are not really a change in the actual colour

Colour is quite an abstract term. Since it is determined by the interactions of light with a substance and our perception of that. Black tends to happen where all light is absorbed and none is reflected. White is where all colours are reflected evenly.
