      Yes, any trained dolphin you see performing has been trained to recognise signals communicated by the trainer, either hand signals, whistle blows or calls from the human. Dolphins have been trained to recognise many different symbols. Lots of people also study the calls of dolphins to work out what they mean. Dolphins are usually calling for the purpose of echo-location (they work out where things are by the echoes that bounce off things like bats do).
